Lagarosiphon major chứa hàm lượng protein cao nên có thể được coi là một nguồn thu nhận peptide có hoạt tính sinh học. Nghiên cứu này chủ yếu khảo sát các yếu tố ảnh hưởng đến quá trình thủy phân protein từ L. major nhằm thu nhận peptide có hoạt tính sinh học, khảo sát ảnh hưởng của tỉ lệ enzyme Alcalase đến mức độ thủy phân (%DH), khả năng bắt gốc tự do (DPPH) được đánh giá ở các giá trị lần lượt là (0,2, 0,4, 0,6, 0,8, 1%), với pH (4, 5, 6, 7, 8), nhiệt độ (40, 50, 60, 70, 80 ℃) và thời gian thủy phân (30, 60, 90, 120, 150 phút). Với sự hỗ trợ của enzyme Alcalase và các điều kiện như: tỉ lệ enzyme/cơ chất (0,8%); nhiệt độ (50 ℃), pH (7,0); thời gian (120 phút), mức độ thủy phân (%DH) là 54,87% và khả năng bắt gốc tự do DPPH là 75,11 ± 0,3%. Ngoài ra, dựa trên khả năng bắt gốc tự do ABTS+ và khả năng khử (RP) để đánh giá các hoạt tính kháng oxy hóa in vitro khác. Kết quả trên cũng đã cho thấy dịch chiết protein sau khi thủy phân có khả năng kháng oxy hóa lần lượt tương ứng với các giá trị IC50 là 67,33 μg/mL và 462,63 μg/mL.
